Ingredients (view qty in metric system instead)
1 tbsp. olive oil 1 medium zucchini, diced 1 medium yellow squash, diced 1/2 tsp. dried red pepper flakes 16 ounce prebaked pizza crust 14 ounce jar mushroom pizza sauce 3 large cloves garlic, peeled and minced 1 cup shredded Mozzarella cheese 1/2 cup oil-packed sun-dried tomatoes, drained and thinly sliced 1/3 cup grated Parmesan cheese
Directions
Preheat oven to 450 degrees. Heat oil in a large skillet over medium heat. Add zucchini, yellow squash and pepper flakes. Cook about 5 minutes until vegetables are almost tender. Place pizza crust on a large baking sheet. Spread pizza sauce over crust, leaving a 1 inch edge all around. Sprinkle with garlic and Mozzarella. Top with vegetable mixture and sun-dried tomatoes. Sprinkle with Parmesan. Bake about 13 to 15 minutes until cheese is melted and crust is crisp.
Makes about 8 pieces.
