Ingredients (view qty in metric system instead)
6 1/2 ounce can water tuna in water 2 medium sized dill pickles, chopped 1/4 cup prepared mayonnaise 1 tbsp. pickle juice 1 tsp. Dijon mustard pinch crumbled dried tarragon pinch pepper 1.4 cup vegetable oil 4 large flour tortillas 1 1/3 cups shredded lettuce 1 1/2 cups grated Cheddar cheese
Directions
Flake tuna into a large bowl. Add pickles and toss to blend. Stir in mayonnaise, pickle juice, Dijon, tarragon and pepper. Cover and refrigerate.
Preheat broiler. Heat oil in a medium skillet over high heat. Fry tortillas, 1 at a time, until golden brown, about 1 minute. Drain tortillas on paper towels. Transfer fried tortillas to a sheet pan. Sprinkle 1/3 cup lettuce over each tortilla. Divide tuna mixture between tortillas. Sprinkle Cheddar over top. Broil tortillas about 1 minute until cheese is melted. Serve immediately.
Makes 4 tostadas.
