Ingredients (view qty in metric system instead)
3 tbsp. plain yogurt 3 tbsp. mayonnaise 1 1/2 tbsp. lemon juice 1/4 tsp. finely grated lemon peel 6.5 ounce can chunk albacore tuna in water, drained 1/3 cup peeled, seeded and diced cucumber 1/3 cup diced red onion 1/4 cup finely chopped red bell pepper 1 tbsp. minced fresh parsley leaves 1/8 tsp. salt 1/8 tsp. pepper
Directions
Stir together yogurt, mayonnaise, lemon juice and peel in a medium bowl. Add tuna, cucumber, onion, bell pepper, parsley, salt and pepper and stir to break up tuna. Cover and refrigerate until ready to use.
Serves 2.
