Ingredients (view qty in metric system instead)
2 tbsp. vegetable oil 1 large onion, peeled and chopped 2 medium green bell peppers, stemmed, seeded and chopped 4 boneless, skinless chicken breast halves, about 6 ounces each 2 cups chunky salsa, drained 2 cups grated sharp cheddar cheese 2 cups grated Monterey Jack cheese warm corn tortillas
Directions
Preheat the oven to 350 degrees. Butter the inside of a medium baking dish. Heat the oil in a large skillet over medium heat. Add the onion and cook about 6 minutes until tender, stirring occasionally. Add the bell peppers and cook about 4 minutes until softened, stirring occasionally. Transfer the vegetables to a bowl. Add the chicken to the skillet and brown on all sides. Transfer the chicken to the prepared baking dish. Spoon the vegetable mixture over the chicken and top with the salsa. Sprinkle with the cheddar and Monterey Jack. Cover and bake about 10 to 15 minutes until the cheeses are melted and the chicken is cooked through. Serve immediately with warm corn tortillas.
