Ingredients (view qty in metric system instead)
1 pound ground beef 1/2 cup chopped onion 1 1/4 ounces taco seasoning mix 15 ounce can tomato sauce 15 ounce can whole kernel corn, drained 2 cups shredded Cheddar cheese 2 cups buttermilk baking mix 1 cup milk 2 large eggs
Directions
Preheat oven to 350 degrees. Cook ground beef with onion in a large skillet until browned. Drain fat. Spoon beef mixture into a 13x9 inch baking dish. Stir in taco seasoning mix, tomato sauce and corn. Sprinkle Cheddar cheese over casserole. Stir together baking mix, milk and eggs in a medium bowl until smooth. Pour batter over casserole. Bake about 35 minutes until top is light golden brown. Let casserole stand 3 to 5 minutes before slicing and serving.
Serves 8 to 10.
