Quick Spring Salad with Bleu Cheese-Dill Dressing

Ingredients (view qty in metric system instead)
Bleu Cheese-Dill Dressing: 1 cup plain lowfat yogurt 4 ounces crumbled bleu cheese 1/2 cup chopped green onions 1/2 tsp. dried dillweed
Spring Salad: 1 small head romaine lettuce, washed and chopped into bite-size pieces 1 medium cucumber, peeled, seeded and sliced 1 bunch watercress, washed and trimmed 1 medium red bell pepper, cored, seeded and sliced into thin strips 1 small red onion, peeled and sliced into thin rings 8 cherry tomatoes, halved
Directions
For Dressing: Combine yogurt, bleu cheese, green onions and dill in a food processor. Process until almost smooth.
For Salad: Toss together romaine, cucumber slices, watercress, red pepper slices, onion rings and cherry tomato halves in a medium bowl. Top with dressing and serve.
Serves 4 to 6.
