Ingredients (view qty in metric system instead)
1/2 cup canned diced green chilies, drained 1 1/2 cups heavy whipping cream 1 small red onion, peeled and thinly sliced 1/4 cup chopped fresh cilantro leaves 1 clove garlic, peeled and minced 6 boneless, skinless chicken breast halves, about 6 to 8 ounces each 1 large tomato, peeled, seeded and chopped
Directions
Combine chilies, cream, red onion, cilantro and garlic in a large saucepan. Boil over medium high heat until reduced to a thick sauce, stirring frequently. Remove the pan from the heat. Preheat broiler. Place chicken breast halves onto a broiler proof pan. Broil chicken about 5 minutes per side until just cooked through. Divide the chicken between plates. Stir the tomatoes into the chili sauce and heat to a simmer. Spoon the sauce over the chicken and serve immediately.
Serves 6.
