Ingredients (view qty in metric system instead)
4 sole fillets, about 6 ounces each 1/4 tsp. salt 1/4 tsp. pepper 1/2 cup flour 2 tbsp. olive oil 8 tbsp. butter, divided 2 tbsp. fresh lemon juice 2 tbsp. chopped fresh parsley
Directions
Season sole fillets with salt and pepper. Place flour in a shallow pie plate. Dredge sole fillets in flour to coat, shaking off excess. Heat oil with 2 tbsp. butter in a large skillet. Add sole and cook 2 minutes over medium-high heat. Turn fillets over and cook and additional 2 minutes until crisp and golden. Transfer fillets to plates. Reduce heat to low. Add remaining 6 tbsp. butter and cook 1 minute. Remove pan from heat and stir in lemon juice and parsley. Pour mixture over sole fillets and serve immediately.
Serves 4.
