Ingredients (view qty in metric system instead)
1 1/2 cups heavy whipping cream 12 ounces uncooked fettuccine noodles 6 ounces smoked salmon, cut into strips 1 tsp. finely grated lemon peel 1 tsp. lemon juice 1 pound fresh asparagus, stemmed and cut into 1 inch pieces 2 tbsp. butter 1/4 tsp. salt 1/4 tsp. pepper
Directions
Place cram in a small saucepan over medium heat. Simmer cream until reduced to 1 cup. Meanwhile, heat a large pan of lightly salted water to a boil. Add fettuccine and boil until just tender, stirring frequently. Drain pasta well and return to the pan. Stir in smoked salmon, lemon peel, lemon juice, asparagus, butter, salt and pepper. Heat to a simmer over low heat. Simmer until asparagus is tender and salmon is heated through. Divide the pasta between plates and serve immediately.
Serves 4.
