4 thin slices Canadian bacon 4 large tomato slices 4 large eggs, room temperature 2 tbsp. cream cheese, diced, room temperature 1/8 tsp. salt 2 tbsp. butter 2 english muffins, split
Directions
Fry Canadian bacon in a medium skillet until lightly browned, about 2 minutes per side. Drain on paper towels. Roll each slice into a cone and fasten at the base with a toothpick. Add tomato slices to skillet and cook about 1 minute per side until heated through. Transfer tomato slices to a plate. Whisk together eggs, cream cheese and salt in a small bowl until well combined. Add butter to skillet and melt. Add egg mixture and cook, stirring occasionally, until set, about 3 minutes. Meanwhile, toast the muffin halves. Place 1 muffin half on each of 4 plates. Top each with a tomato slice. Spoon eggs over tomatoes. Remove toothpicks from Canadian bacon. Place bacon slices over eggs. Serve immediately.
Serves 4.
