Ingredients (view qty in metric system instead)
1/2 cup apple jelly 1/4 cup lemon juice 1 tsp. pumpkin pie spice 2 pounds pork tenderloin 4 sweet red apples, cored, unpeeled
Directions
Stir togrther jelly, lemon juice and pie spice in a small bowl. Place pork tenderloin in a shallow roasting pan. Brush with half of the jelly mixture. Roast 20 to 30 minutes to an internal temperature of 155 degrees. Remove pork from oven and let stand 5 minutes. Meanwhile, preheat broiler. Coat a broiler pan lightly with cooking spray. Thinly slice apples and place on prepared pan. Brush apple slices with remaining jelly mixture. Broil 5 to 6 inches from heat until apples are tender, about 5 minutes. Slice pork and serve immediately with broiled apples.
Serves 4 to 6.
