Ingredients (view qty in metric system instead)
3 tbsp. butter 10 ounce package frozen, thawed green peas 1 head Boston lettuce, chopped 4 green onions, chopped 5 cups chicken broth 1/2 tsp. salt 1/4 tsp. pepper 1/2 cup sour cream
Directions
Melt butter in a large saucepan over low heat. Add peas, lettuce and onions. Cook about 5 minutes until onions are tender, stirring occasionally. Increase heat, add broth and heat to a boil. Reduce heat and simmer 8 minutes until peas are tender. Transfer soup to a blender and puree. Season with salt and pepper. Return soup to the saucepan and heat to a simmer. Ladle soup into bowls, garnish with dollops of sour cream and serve.
Serves 6.
