Ingredients (view qty in metric system instead)
3 large eggs 1/4 cup salt 1/4 cup pepper 2 tbsp. unsalted butter 3 to 4 slices pastrami(about 1/4 pound)
Directions
Whisk together eggs, salt and pepper in a small bowl. Melt butter in a large non-stick skillet. Add pastrami and cook until meat is warm and fat is translucent, about 1 minute. Add eggs to skillet and cook until set, lifting edges occasionally with a spatula and letting uncooked egg run underneath. Serve immediately with toasted rye bread, hash browns and dill pickles if desired.
Serves 1 to 2.
