Quick Pan-Fried Ribeyes with Blue Cheese Butter

Ingredients (view qty in metric system instead)
2 tbsp. butter, room temperature 2 tbsp. crumbled blue cheese(about 1 ounce) 1 tbsp. minced shallot 1 tsp. chopped fresh chives two 8 ounce ribeye steaks, about 3/4 inch thick !/4 tsp. salt 1/4 tsp. pepper
Directions
Stir together butter, shallot and chives in a small bowl. Cover and refrigerate 20 to 30 minutes until firm.
Melt half of blue cheese butter in a large skillet over high heat. Season steaks on both sides with salt and pepper. Add steaks to skillet and cook to desired doneness, about 3 minutes per side for medium-rare. Transfer steaks to plates and place remaining blue cheese butter on top.
Serves 2.
