Ingredients (view qty in metric system instead)
2 center cut pork loin chops, about 3/4 inch thick 1/4 cup finely chopped onion pinch dried thyme 1/2 tsp. salt, divided 1/4 tsp. pepper, divided 2 tbsp. all purpose flour 2 tbsp. vegetable oil
Directions
Cut a horizontal pocket in the side of each pork chop. Stir together onion, thyme, 1/4 tsp. salt and 1/8 tsp. pepper in a small bowl. Spoon the onion mixture into the pockets in the pork chops. Stir together flour and remaining 1/4 tsp. salt and 1/8 tsp. pepper in a pie plate. Dredge both sides of the pork chops in the flour. Heat the oil in a medium skillet over medium high heat. Add the chops and cook about 4 minutes per side until cooked through. Serve immediately.
Serves 2.
