Ingredients (view qty in metric system instead)
4 slices lean bacon, chopped 1 cup clam juice 2 cups milk 1/2 cup instant mashed potato flakes two 7 1/2 ounce cans chopped clams 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. onion powder 1/2 cup heavy or whipping cream 1 tbsp. chopped fresh parsley leaves 1 tbsp. butter
Directions
Cook bacon in a large saucepan until crisp. Drain all but 1 tbsp. pan drippings. Add clam juice, milk and potato flakes and heat to a boil. Stir in salt, pepper and onion powder. Add chopped clams and reduce heat. Simmer 3 minutes. Remove pan from heat and stir in cream, parsley and butter. Serve hot.
Serves 4 to 6.
