Ingredients (view qty in metric system instead)
2 1/2 to 3 pounds cucumbers 1 1/2 cups white vinegar 1 cup water 1 cup sugar 1/2 cup prepared yellow mustard 2 tsp. salt 1 tsp. prepared horseradish, drained
Directions
Cut cucumbers into 1/4 inch thick slices. Combine vinegar, water, sugar, mustard, salt and horseradish in a large saucepan. Heat to a boil over medium heat, stirring frequently. Pack the cucumber slices into 4 hot, clean pint size canning jars. Pour the hot vinegar mixture over the cucumbers to come within 1/2 inch of the top of the jars. Seal the jars and place them in a boiling water bath for 5 minutes. Remove the jars from the water bath and let cool completely before storing.
Makes 4 pints pickles.
