Ingredients (view qty in metric system instead)
1/4 cup olive oil 1/4 cup chopped fresh mint leaves 4 large cloves garlic, peeled and minced 2 tsp. salt 2 tsp. ground cumin 1 tsp. ground coriander 1 tsp. cayenne pepper 1 tsp. black pepper 8 lamb chops, about 5 ounces each
Directions
Preheat broiler. Stir together olive oil, mint, garlic, salt, cumin, coriander, cayenne and black pepper in a small bowl. Spread the mint mixture over both sides of the lamb chops. Transfer the chops to a broiler pan and let stand 10 minutes.
Broil chops about 4 minutes per side for medium rare until browned and crusty. Divide lamb chops between plates and serve immediately.
Serves 4.
