Ingredients (view qty in metric system instead)
6 tbsp. butter, softened 1/3 cup creamy peanut butter 1/3 cup sugar 1/3 cup brown sugar 1 large egg 1 2/3 cups all purpose flour 2/3 cup strawberry jam
Directions
Beat together butter, peanut butter, both sugars and egg in a medium bowl. Beat in flour on low speed until crumbly. Reserve 1 cup of the crumb mixture. Press the remaining crumbs evenly into the bottom of an 8 inch square baking dish. Elevate the baking dish on a microwave rack or plate. Cook 3 minutes on MEDIUM power. Rotate the baking dish. Cook about 3 1/2 more minutes until the crumb mixture looks dry. Spread jam on the crust, leaving a 1/2 inch margin all around. Sprinkle the reserved 1 cup crumb mixture evenly over the jam. Microwave 3 minutes on MEDIUM power. Rotate the dish and microwave an additional 3 to 4 minutes until the jam is bubbly in the center. Transfer the dish to a rack and cool bars completely. Cut into squares.
Makes about 16 bars.
