Quick Manhattan-Style Clam Chowder Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
4 ounces bacon, diced
1 large clove garlic, peeled and minced
1 medium onion, peeled and chopped
1 medium green bell pepper, cored, seeded and chopped
2 cups bottled clam juice or chicken broth
28 ounce can stewed tomatoes with juices
two 8 ounce cans chopped clams with juices
10 ounce can baby clams with juices
1/2 cup tomato juice
1 tsp. salt
1 tsp. pepper
1/8 tsp. tabasco sauce

Directions
Brown bacon with garlic in a large saucepan over medium-high heat. When bacon is almost crisp, add onion and bell pepper. Cook 5 to 8 minutes until onion is tender, stirring occasionally. Stir in clam juice or broth, tomatoes with juices and chopped and baby clams. Bring soup to a boil. Reduce heat and simmer about 20 to 30 minutes until soup is slightly thickened. Season with salt, pepper and tabasco sauce. Serve hot.

Serves 6 to 8.
