one 4 ounce sheet packaged puff pastry 2 tbsp. sugar, divided 3/4 pound McIntosh apples, peeled, cored and thinly sliced 1 tsp. vanilla extract 2 tsp. cold diced butter
Directions
Roll out puff pastry on a floured surface to a 10 inch square. Cut dough into four 5 inch squares. Prick each square in several places with a fork. Transfer the dough squares to a sheet pan. Freeze 20 to 30 minutes until firm. While dough is freezing, preheat oven to 400 degrees. Sprinkle 1/4 tsp. sugar over each dough square. Arrange a circle of overlapping apple slices in the middle of each dough square, leaving a 1/2 inch border all around. Drizzle apple slices with vanilla. Sprinkle remaining 1 1/4 tsp. sugar over apples. Dot each tart with 1/2 tsp. of the diced butter. Bake tarts about 20 minutes until dough is puffed and browned. Serve hot or warm.
