Ingredients (view qty in metric system instead)
1 large tomato, stemmed, seeded and chopped 1/2 cup canned diced green chilies 1/2 cup sliced black olives 1/4 cup thinly sliced green onion 1/4 cup butter, softened four 10 inch flour tortillas 2 cups shredded Cheddar cheese 2 cups shredded Monterey Jack cheese 1 cup sliced fresh mushrooms salsa
Directions
Toss together tomato, chilies, black olives and green onions in a medium bowl. Place a large skillet over medium high heat. Butter both sides of 1 tortilla. Add buttered tortilla to the skillet and cook about 1 to 2 minutes on 1 side until crisped and lightly browned. Turn the tortilla over and reduce heat to low. Sprinkle the top of the tortilla with 1/2 cup Cheddar, 1/2 cup Monterey Jack and 1/4 cup mushrooms. Spoon 1/4 of the tomato mixture over the pizza then drizzle with salsa. Cover and cook pizza about 5 minutes until the cheese is melted. Repeat cooking with remaining tortilllas and topping ingredients.
Makes 4 pizzas.
