Ingredients (view qty in metric system instead)
Filling: 2 1/2 pounds peeled, cored and thinly sliced granny smith apples 2 pounds mcintosh apples, peeled cored and thinly sliced 1/4 cup sugar 1/2 tsp. ground cinnamon 1/8 tsp. salt 2 tbsp. butter 3/4 cup golden raisins 1/2 cup heavy or whipping cream
Topping: 1 1/4 cups all purpose flour 1/3 cup brown sugar 1/3 cup granulated sugar 1 tbsp. yellow cornmeal 7 tbsp. melted butter
Directions
For Filling: Toss together apples, sugar, cinnamon and salt in a large bowl. Melt butter in a large skillet. Add apple mixture and cook, covered, about 5 minutes until apples are tender, stirring occasionally. Stir in raisins and cook, covered, about 5 minutes, stirring frequently. Transfer apples to a strainer and drain off as much liquid as possible into a medium saucepan. Sti cream into liquid and heat to a boil. Cook, stirring occasionally, until thickened, about 5 minutes. Transfer apples to an 8x8 inch baking dish. Pour juice mixture over.
For Topping: Preheat oven to 425 degrees. Combine flour, both sugars and cornmeal in a medium bowl. Drizzle with melted butter and toss with a fork until evenly moistened and coarse crumbs form. Transfer to a baking sheet and spread in a single layer. Bake about 5 minutes until golden brown. Cool 5 minutes. Sprinkle over top of apples. Place crisp on a baking sheet and bake until topping is deep golden brown, about 10 minutes. Cool slightly. Serve hot or warm.
Serves 6 to 8.
