Ingredients (view qty in metric system instead)
1/4 cup butter or margarine 1 small onion, peeled and sliced 4 ounce can sliced mushrooms, drained 2 cups chicken broth 1 cup uncooked long-grain rice 2 cups chopped cooked chicken 1 green bell pepper, stemmed, seeded and thinly sliced 1/2 cup diced celery 1/4 cup half & half 1/4 tsp. salt 1/4 tsp. pepper
Directions
Melt butter or margarine in a large skillet. Add onions and mushrooms and cook about 8 minutes until onion is softened. Add broth and heat to a boil. Stir in rice. Reduce heat, cover and simmer 10 minutes. Stir in chicken, bell pepper, celery, half & half, salt and pepper. Cover and simmer 10 to 15 minutes.
Serves 6 to 8.
