Ingredients (view qty in metric system instead)
20 ounce can pineapple chunks, drained, 3 tbsp. juice reserved 1/2 cup water 3 tbsp. soy sauce 1 tbsp. cornstarch 1 tsp. white vinegar 1/4 tsp. crushed red pepper flakes 1 pound boneless pork loin, cut into strips 2 tbsp. vegetable oil 2 large cloves garlic, peeled and minced 2 tbsp. peeled, minced fresh ginger 1 medium onion, peeled and cut into wedges 2 medium carrots, peeled and matchsticked 1 green bell pepper, cored, seeded and matchsticked 2 cups fresh or frozen, thawed snow peas
Directions
Stir together reserved pineapple juice, water, soy sauce, cornstarch, vinegar and red pepper flakes in a small bowl. Heat oil in a large skillet. Add pork strips and brown well. Stir in garlic and ginger and cook 1 minute. Add onion and carrots and cook 1 minute. Stir in cornstarch mixture, pineapple, bell pepper and snow peas. Cook, stirring, until sauce thickens and boils. Serve over hot, cooked rice if desired.
Serves 4.
