Ingredients (view qty in metric system instead)
1 clove garlic, minced 1/4 tsp. salt 1/2 tsp. dried thyme 4 tsp. fresh lemon juice 2 chicken breast halves 1 1/2 tsp. vegetable oil 1 1/2 tsp. butter 1 1/2 tbsp. all purpose flour 3/4 cup chicken broth 1 tsp. minced fresh parsley hot cooked rice or noodles
Directions
Stir together garlic, salt, thyme and 3 tsp. lemon juice in a shallow bowl. Add chicken and turn to coat. Cover and let chicken marinate 15 minutes.
Remove chicken from marinade. Heat oil and butter in a medium skillet. Add chicken and cook over medium-high heat until golden, about 2 minutes per side. Transfer chicken to a plate. Reduce heat and add flour to skillet. Cook, stirring, 3 minutes. Whisk in broth and remaining 1 tsp. lemon juice. Whisk until smooth. Return chicken to skillet. Cover and simmer about 15 minutes until chicken is just cooked through. Stir in parsley. Serve over rice or noodles.
Serves 2.
