Ingredients (view qty in metric system instead)
1 tbsp. vegetable oil 1 1/2 cups chopped onion 1 1/2 cups peeled and thinly sliced carrot 1 cup thinly sliced celery 1 cup diced red bell pepper 1 1/2 cups peeled, diced potato 2 tbsp. all purpose flour 1 cup vegetable broth 3/4 cup water 3/4 tsp. ground cumin pinch cayenne pepper 1/4 tsp. salt 1/4 tsp. pepper 3/4 cup grated Cheddar cheese 2 tsp. minced cilantro leaves
Directions
Heat oil in a large saucepan. Add onion, carrot, celery, bell pepper and potato. Cook over medium heat, stirring frequently, until onion is tender. Add flour and cook, stirring, 3 minutes. Stir in vegetable broth, water, cumin, salt and pepper. Simmer 10 minutes, stirring occasionally. Remove pan from heat and add Cheddar and cilantro. Stir until Cheddar is melted and incorporated.
Serves 2 to 4.
