1 3/4 cups all purpose flour 2 tsp. baking powder 1 tsp. salt 3 tbsp. solid vegetable shortening 1/2 cup shredded Cheddar cheese 3/4 cup buttermilk 1/2 cup chopped green onions
Directions
Preheat oven to 425 degrees. Butter 2 large baking sheets. Combine flour, baking powder and salt in a large bowl. Cut in vegetable shortening until a coarse meal forms. Stir in Cheddar, buttermilk and onions and mix well. Transfer dough to a floured surface and roll out to 1/2 inch thick. Cut out biscuits with a 1 1/2 inch round biscuit cutter or floured glass. Transfer biscuits to the prepared pans. Gather up dough scraps. Roll out scraps and cut additional biscuits. Bake biscuits about 15 minutes until puffed and golden. Cool biscuits slightly before serving.
Makes about 2 1/2 to 3 dozen biscuits.
