Ingredients (view qty in metric system instead)
3 pounds chicken pieces 1/2 tsp. dried thyme 1/2 tsp. salt 1/4 tsp. pepper 1 tbsp. vegetable oil 14.5 ounce can Cajun style stewed tomatoes 1 medium green bell pepper, cored, seeded and sliced into strips 1 cup sliced celery 2 cloves garlic, peeled and minced
Directions
Season chicken pieces all over with thyme, salt and pepper. Heat oil in a large skillet over medium high heat. Add the chicken pieces to the skillet and brown 15 minutes, turning chicken frequently. Drain the oil from the skillet. Add the tomatoes, bell pepper strips, celery and garlic to the skillet and heat to a simmer. Cover the skillet and reduce heat to medium low. Simmer the chicken 10 minutes. Uncover the skillet and increase heat to medium high. Cook until sauce is thickened and chicken is cooked through, about 5 minutes. Serve chicken immediately.
Serves 4.
