Quick Broiled Sweet and Spicy Catfish Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
4 catfish fillets, about 6 ounces each
1/2 tsp. salt
1 tsp. pepper
3 tbsp. sweet orange marmalade
1 tsp. lemon juice
1/2 tsp. paprika
1/4 tsp. finely grated lemon peel
1/4 tsp. minced garlic
1/4 tsp. cayenne pepper


Directions
Preheat broiler. Lightly coat a broiler proof pan with cooking spray. Season each catfish fillet with 1/8 tsp. salt and 1/4 tsp. pepper. Place catfish in the prepared pan. Stir together marmalade, lemon juice, paprika, lemon peel, garlic and cayenne in a small bowl. Spread the marmalade mixture over the top of the catfish fillets. Broil catfish about 6 inches from the heat for about 8 to 10 minutes until cooked through. Serve immediately.
