Ingredients (view qty in metric system instead)
1/2 cup vegetable oil 2 tbsp. chili powder 1 tbsp. canned, minced chipotle pepper in adobo 1/4 cup lime juice 2 tbsp. sugar 2 tbsp. Dijon mustard 1 1/2 pounds pork tenderloin
Directions
Combine oil, chili powder and chipotle in a small saucepan. Cook, stirring, over medium high heat until heated through. Remove the pan from the heat and whisk in lime juice, sugar and Dijon. Cool to room temperature. Place pork in a shallow baking dish. Pour 1/4 cup of the chipotle sauce over the pork and turn to coat. Cover pork and let stand 30 minutes, turning every 10 minutes.
Preheat broiler. Place a rack in a broiler proof pan. Remove the pork from the marinade and place on the rack. Broil pork about 8 minutes per side until temperature reaches 155 degrees. Transfer pork to a cutting board and tent with foil. Let pork stand 5 minutes. Meanwhile, heat the remaining chipotle sauce to a simmer. Slice pork and serve with sauce.
Serves 4.
