Ingredients (view qty in metric system instead)
1 tbsp. butter 1 tbsp. vegetable oil 4 Red Delicious apples, peeled, cored and cut into wedges 1/4 cup orange liqueur 1 1/4 cups chicken broth 2 tbsp. chopped fresh parsley leaves 3 tbsp. honey 1 tsp. finely grated orange peel 1/4 tsp. salt 1/4 tsp. pepper 4 rib or loin pork chops, about 6 to 8 ounces each
Directions
Combine butter and oil in a large skillet over medium high heat. Add apples and cook about 10 minutes until tender and golden, stirring occasionally. Add liqueur and bring to a boil. Stir in broth, parsley, honey, orange peel, salt and pepper. Simmer about 5 minutes until sauce is slightly thickened. Meanwhile, preheat broiler. Place pork chops on a broiler pan. Broil pork about 7 minutes per side until cooked through. Transfer chops to plates and spoon warm sauce over. Serve immediately.
Serves 4.
