Ingredients (view qty in metric system instead)
1 slice day old wheat or whole grain bread 1/4 cup Italian parsley leaves 1 clove garlic, peeled and minced 1/2 tsp. finely grated lemon peel 1/8 tsp. pepper 1/4 cup mayonnaise 6 tilapia fillets, about 4 to 6 ounces each 1 tsp. lemon juice
Directions
Preheat oven to 425 degrees. Lightly coat a sheet pan with cooking spray. Place bread into a food processor and blend until crumbs form. Transfer bread crumbs to a small bowl. Add parsley, garlic, lemon peel and pepper to the food processor and blend until the parsley is finely chopped. Add mayonnaise and pulse until combined. Place the tilapia fillets on the prepared pan. Sprinkle the lemon juice over the tilapia. Spread the mayonnaise mixture evenly over the top of the tilapia. Sprinkle the bread crumbs over the mayonnaise mixture. Bake tilapia about 15 minutes until cooked through.
Serves 6.
