Ingredients (view qty in metric system instead)
1 1/2 pound red snapper fillets 2 cups hot cooked rice 4 ounces sliced fresh mushrooms 1/2 cup diced water chestnuts 1/4 cup thinly sliced green onions 1/4 cup diced pimiento 2 tbsp. chopped fresh parsley 1 tbsp. finely grated lemon peel 1/2 tsp. salt 1/8 tsp. pepper 1 tbsp. melted butter or margarine
Directions
Preheat oven to 400 degrees. Combine rice, mushrooms, water chestnuts, onions, pimiento, parsley, lemon peel, salt and pepper in a large bowl. Toss to combine. Cut a pocket in the side of fish fillets and stuff with rice mixture. Seal pocket with toothpicks. Place stuffed fillets in a 13x9 inch baking pan coated with nonstick spray. Place any leftover rice mixture around fish. Bake 18 to 20 minutes until fish is cooked through.
Serves 4.
