Quick Baked Sole with Tomatoes and Garlic Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 fresh or frozen, thawed sole fillets, about 6 ounces each
1/4 tsp. salt
1/4 tsp. pepper
2 tbsp. olive oil
1 large tomato, stemmed, seeded and chopped
1 tbsp. minced garlic
1 tbsp. chopped fresh garlic

Directions
Preheat oven to 400 degrees. Brush the bottom of a small baking dish with olive oil. Place sole fillets in prepared dish. Season with salt and pepper. Stir together olive oil, tomato and garlic in a small bowl. Spoon mixture over sole. Bake about 10 to 15 minutes until fish is just cooked through. Sprinkle fillets with parsley and serve.
