Ingredients (view qty in metric system instead)
Crust: 18 1/2 ounce package yellow cake mix 1/2 cup sweetened flake coconut 1/2 cup butter, room temperature
Filling: 4 small pippin apples, peeled, cored and thin sliced 1/4 cup + 2 tbsp. sugar 1 tsp. ground cinnamon 1 cup sour cream 1 large egg
Directions
For crust: Preheat oven to 350 degrees. Stir together cake mix and coconut. Cut in butter until crumbly. Press into bottom and 1 inch up sides of a buttered 9x13 baking dish. Bake 10 minutes until edges are golden brown.
Filling: Arrange apple slices over crust. Sprinkle with 1/4 cup sugar and cinnamon. Whisk together sour cream, egg and 2 tbsp. sugar to blend. Pour over apples. Bake until apples are tender and filling is set, about 40 minutes. Serve warm.
Makes about 8 portions.
