Ingredients (view qty in metric system instead)
1/4 cup sliced almonds 2 tbsp. chopped fresh chives 1 tbsp. chopped fresh parsley leaves 1/2 tsp. finely grated lemon peel 2 slices white bread without crusts, torn into pieces 1/2 tsp. salt, divided 4 salmon fillets, about 6 ounces each 1/4 tsp. lemon pepper
Directions
Preheat oven to 400 degrees. Line a sheet pan with nonstick foil. Combine almonds, chives, parsley leaves, lemon peel, bread and 1/4 tsp. salt in a food processor. Blend until finely chopped. Sprinkle salmon fillets with remaining 1/4 tsp. salt. Divide the bread mixture between salmon fillets, spreading evenly over the top and pressing lightly to adhere. Bake salmon about 10 minutes until fish is cooked through and crust is lightly browned. Serve immediately.
Serves 4.
