Ingredients (view qty in metric system instead)
Apples: 3 tbsp. butter 4 cups diced, peeled granny smith apples 3 tbsp. sugar 1 tsp. ground cinnamon
Cake: 1 1/2 cups all purpose flour 1 cup brown sugar 1/2 cup diced butter, softened 3/4 cup canned pumpkin puree 1/3 cup sour cream 2 tbsp. sugar 2 tsp. pumpkin pie spice 1 tsp. baking soda 2 large eggs
Directions
For Apples: Melt butter in a large non-stick skillet. Add apples and cook until starting to brown, about 5 minutes. Add sugar and cinnamon and cook until golden brown, about 3 to 5 minutes. Cool.
For Cake: Preheat oven to 350 degrees. Butter a 9 inch springform pan. Combine flour, brown sugar, butter and salt in a large bowl. Beat with a mixer until a coarse meal forms. Reserve 2/3 cup mixture for topping. Beat together pumpkin puree, sour cream, sugar, pie spice and baking soda. Add to remaining flour mixture and beat until smooth. Beat in eggs. Transfer batter to prepared pan. Spread apples evenly over top of batter. Sprinkle reserved topping over apples. Bake about 70 minutes until topping is golden and a toothpick comes out clean. Cool in pan on a rack 20 minutes. Remove pan sides and serve warm or at room temperature.
Serves 6 to 8.
