Ingredients (view qty in metric system instead)
2 cups canned pumpkin puree 1 1/2 cups heavy or whipping cream 3/4 cup brown sugar 3 large eggs, separated 1 1/2 tsp. ground cinnamon 1 tsp. ground ginger 1/2 tsp. salt 1/2 tsp. ground nutmeg 1/4 tsp. ground cloves 1/4 tsp. ground allspice prebaked 9 or 10 inch pie crust 1 cup pecan halves 6 tbsp. apricot jam
Directions
Preheat oven to 300 degrees. Blend together pumpkin, cream, sugar, yolks, cinnamon, ginger, salt, nutmeg, cloves and allspice in a large bowl. In a separate bowl, beat egg whites until stiff but not dry. Fold into pumpkin mixture. Pour filling into prepared pie crust. Place crust in a roasting pan and fill with enough water to come halfway up sides of pie pan. Bake pie until center is set, about 75 minutes. Arrange pecan halves around outer edge of pie. Bake 15 minutes. Transfer pie to rack and cool completely. Heat jam in a small saucepan until melted. Strain over top of cooled pie and spread evenly with a brush or spoon.
Serves 8 to 10.
