Ingredients (view qty in metric system instead)
2 cups biscuit mix 2 tbsp. brown sugar 2 tsp. ground cinnamon 1 1/2 cups canned evaporated milk 1 tsp. allspice 1/2 cup canned pumpkin pie filling 2 tbsp. vegetable oil 2 large eggs 1 tsp. vanilla extract
Directions
In a large bowl beat together biscuit mix, sugar, cinnamon and allspice. Add milk, pumpkin, oil, eggs and vanilla. Beat until smooth. Pour 1/4 to 1/2 cup batter(depending on size you want) onto preheated, lightly greased griddle. Cook until top is bubbly and edges are dry. Turn and cook until golden. Serve with honey, syrup or melted orange marmalade.
Makes 8 to 16 pancakes.
