Ingredients (view qty in metric system instead)
Casserole: 3 large sweet potatoes 1 cup sugar 2 large eggs, beaten to blend 1/2 cup butter, softened 1 tsp. vanilla extract
Crunch Topping: 1/3 cup all purpose flour 1 cup brown sugar 1 cup chopped pecans 1 tbsp. ground cinnamon 1/3 cup melted butter
Directions
For Casserole: Boil potatoes in a large pot until tender. Cool and peel. Chop potatoes and transfer to a large bowl. Whip potatoes until fluffy. Stir in sugar, eggs, butter and vanilla. Pour into a greased casserole dish and sprinkle with topping. Bake 45 minutes.
For Topping: Stir together flour, sugar, pecans and cinnamon in a medium bowl. Add butter and stir until crumbs form.
Serves 4 to 6.
