Ingredients (view qty in metric system instead)
3 1/2 cups all purpose flour 1 tsp. baking powder 2 tsp. baking soda 1 tsp. nutmeg 1 tsp. ground cinnamon 1 tsp. ground allspice 1/2 tsp. ground cloves 2 tsp. salt 3 cups sugar 1 cup vegetable oil 15 ounce can pumpkin puree 2/3 cup water 4 large eggs, beaten to blend 2/3 cup coarsely chopped nuts 2/3 cup raisins
Directions
Preheat oven to 350 degrees. Grease the bottoms only of two 9x5 inch loaf pans. Sift together flour, baking powder, baking soda, allspice, nutmeg, cinnamon and cloves. Stir in salt. Mix together sugar and oil. Add pumpkin, water and eggs. Beat in flour mixture. Stir in nuts and raisins. Divide batter between prepared pans. Bake 60 to 70 minutes until a toothpicj comes out clean. Cool in pan 5 minutes. Loosen bread from sides of pan and turn out onto a rack. Cool completely.
Makes 2 loaves.
