Ingredients (view qty in metric system instead)
2 pork tenderloins, about 12 ounces each 1/2 tsp. salt 1/2 tsp. pepper 1/2 cup diced red onion 1 tbsp. butter 16 ounce bottle sweet and tangy barbecue sauce 6 Kaiser rolls or hamburger buns, split and toasted
Directions
Preheat oven to 400 degrees. Lightly coat the inside of a roasting pan with cooking spray. Season the pork all over with salt and pepper. Place the pork in the prepared pan and roast about 35 minutes until the temperature reaches 160 degrees. Remove the pork from the oven and let cool a few minutes. Shred pork into long, thin strands. Melt butter in a large saucepan over medium heat. Cook about 5 minutes until onion is softened, stirring occasionally. Reduce heat to low. Add the barbecue sauce and simmer 2 minutes, stirring frequently. Pour the sauce mixture over the pulled pork and toss to coat. Divide the pulled pork between rolls and serve.
Serves 6.
