Ingredients (view qty in metric system instead)
3 lbs. pork shoulder 1 tsp. pepper 1 tsp. garlic powder 3 to 4 heads iceberg lettuce, chopped 1 pound wedged tomatoes 12 ounces sliced black olives 8 hard boiled eggs, chopped 12 ounces diced red onion 1 pound grated cheddar cheese barbecue sauce
Directions
Season pork with pepper and garlic powder. Smoke at 250 degrees until internal temperature of pork is 180 degrees. Cool and pull meat from bone. Toss together lettuce, tomato, black olives, eggs, onion and cheese. Divide between 12 salad bowls. Top each with a portion of pulled pork. Serve barbecue sauce on side.
Serves 12.
