Ingredients (view qty in metric system instead)
1 1/2 tbsp. salt 2 tsp. Chinese 5 spice powder 1 tsp. pepper 6 to 7 pounds boneless pork butt roast 4 tbsp. vegetable oil 4 cups prepared Oriental plum sauce 2 cups chicken broth
Directions
Preheat oven to 300 degrees. Stir together salt, 5 spice powder and pepper in a small bowl. Rub spice mixture all over the pork. Place the oil in a Dutch oven or other oven proof pan and heat over medium heat. Add pork and brown on all sides. Stir together plum sauce and broth in a medium bowl. Pour the plum mixture over the pork and heat to a simmer. Cover the pan and transfer to the oven. Roast pork about 3 hours, turning occasionally, until very tender and almost falling apart. Remove pan from the oven and transfer to a rack. Cool the pork completely in the sauce.
Remove the pork from the sauce and pull apart into large shreds, discarding fat. Strain the sauce into a medium bowl.
For each serving, heat 1 cup pulled pork with 1/3 cup strained sauce. Serve immediately on buns if desired.
Makes about 12 servings.
