Ingredients (view qty in metric system instead)
6 eggs, separated, room temperature 1/8 tsp. cream of tartar 2 tbsp. sugar 2 tbsp. butter
Directions
Preheat oven to 350 degrees. Beat yolks until thick and ribbon forms. Beat whites with cream of tartar to soft peaks. Add sugar in 2 additions and beat till stiff and shiny. Fold 1/4 of whites into yolks. Fold yolk mixture into whites. Melt butter in a 12 inch skillet, tilting to cover bottom and sides. Add egg mix and smooth with spatula. Bake until puffed and brown and top feels firm, approx. 15 minutes. Make a shallow cut down center. Spread 2/3 cup desired filling* over 1/2. Fold other 1/2 over and serve immediately.
* Great with just about any type of filling including: nuts, fresh or dry fruit, whipped cream, pastry cream, preserves, ice cream, etc.
Serves 2 to 4.
