Ingredients (view qty in metric system instead)
Dressing: 12 ounces plain yogurt 1/4 cup chopped fresh parsley 1/3 cup lemon juice 1/3 cup grated parmesan cheese 1/3 cup olive oil 1 1/2 tsp. minced garlic 1 tbsp. minced fresh basil 1/4 tsp. salt 1/4 tsp. pepper
Salad: 1 pound cooked bow tie pasta 12 ounces cooked chicken, cubed 1 cup thin sliced carrots 1 pound zucchini, halved lengthwise and thinly sliced 1/2 cup diced red bell pepper 1/4 cup sliced green onion 6 hard boiled eggs, peeled and sliced
Directions
For Dressing: Whisk together yogurt, parsley, lemon juice and parmesan. Slowly whisk in olive oil to emulsify. Stir in garlic, basil, salt and pepper.
For salad: Toss together pasta, chicken, carrots, zucchini, bell pepper and onion. Add dressing and toss to coat. Garnish with hard boiled egg slices.
Serves 8 to 10.
