Ingredients   (view qty in metric system instead)
4 large unpeeled baked potatoes
15 ounce can ranch-style beans
1 cup sour cream
1/2 cup butter, room temperature
1 tsp. salt
1 tsp. pepper
1 large green bell pepper, stemmed, seeded and chopped
1 medium onion, peeled and chopped
1 cup grated cheddar cheese

Directions
Preheat oven to 425 degrees. Slice off the top third of each potato lengthwise. Scoop out the meat of the potato, leaving a 1/4 inch thick shell. Mash scooped-out potato until smooth. Drain beans, reserving juices. Mash beans in a medium bowl. Add sour cream, butter, mashed beans, salt and pepper and mix well. Stir in mashed potatoes and add enough reserved bean juice to moisten. Divide mixture between potato shells. Top with cheddar, onion and green pepper. Bake potatoes about 15 to 20 minutes until browned.

Makes 4 potatoes.
