Ingredients (view qty in metric system instead)
Sauce: 2 tsp. olive oil 1/2 cup chopped onion 1 cup heavy or whipping cream 8 ounce package cream cheese, softened 1 cup grated Parmesan cheese 1/2 cup grated Swiss cheese pinch ground nutmeg 1/4 tsp. salt 1/4 tsp. pepper
Potatoes: 2 pounds large red potatoes, cut into chunks 12 cups water 2 tsp. salt 2 tbsp. olive oil
Directions
For Sauce: Heat oil in a medium saucepan over medium heat. Add onion and cook about 5 minutes until tender, stirring occasionally. Reduce heat to low and add cream, cream cheese, Parmesan and Swiss cheeses. Whisk until melted and smooth. Whisk in nutmeg, salt and pepper.
For Potatoes: Combine potatoes, water and salt in a pot. Heat to a boil over high heat. Reduce heat to medium and simmer potatoes about 8 minutes until just tender. Transfer potatoes to a bowl and toss with olive oil. Drizzle fondue sauce over potatoes and serve.
Serves 6 to 8.
