Ingredients (view qty in metric system instead)
5 cups peeled, cubed potatoes 2 tsp. salt, divided 2 cups cottage cheese 1 cup sour cream 1/4 cup minced green onion 1/2 tsp. minced garlic 1/2 cup shredded cheddar cheese paprika
Directions
Boil potatoes in water to cover until just beginning to feel tender. Drain and cool under cold running water. Drain well and cool completely. Sprinkle with 1 tsp. salt. Preheat oven to 350 degrees. Stir together remaining 1 tsp. salt, cottage cheese, sour cream, onion and garlic. Fold in cubed potatoes. Pour into a greased 1 1/2 quart casserole. Sprinkle cheese and paprika over. Bake 40 to 45 minutes until cheese is melted and bubbly and potatoes are tender.
Serves 4.
